How to Prepare Sopa de Tortilla

Ingredients:

10 oz tomatoes
1 dried guajillo chile without seeds
1 dried morita chile without seeds
1 tbsp peeled garlic
3 tbsp of white onion
5 tsp cooking oil
1 quart chicken/vegetable stock or substitute water

TO ACCOMPANY
Cubed avocado
Cubes of panela cheese
Canned ground chipotle
8 tortillas cut into julienne strips and fried

Instructions:

Boil tomato with chiles, garlic, and onion for 10 minutes.
Blend very well. Strain.
Heat oil in saucepan. Fry blended tomato mixture for 3 minutes over medium flame.
Pour in the stock to lighten the soup. Boil for 5 more minutes.
Salt soup to your liking.
Place a portion of tortillas on each plate. Pour in the soup.
Accompany with cheese, avocado, and chipotle, per your preference.

How to Serve Sopa de Tortilla

Tips for Making this Sopa de Tortilla Recipe

Be sure to hydrate the chilies before blending them so that you have a smooth texture without bits of chili that are not ground well.
