How to Prepare Sopitos

Ingredients:

12 oz ground beef
1 onion
2 garlic cloves
5 tomatoes
Oregano to taste
½ gallon water
18 oz tortillas
Fresh cheese
½ head lettuce
Salt to taste
Oil
1 radish

Instructions:

Bring water to a boil. Form ground beef into meatballs.

Boil meatballs in water with salt and 1 clove of garlic.

Once meat turns brown and appears cooked, add half an onion and 5 tomatoes.

Once tomatoes soften, remove from pot. Blend in blender with 1 clove garlic and part of meat broth. Be sure to add a little fat floating on the top of the water that the meat releases.

Remove meatballs and reserve on plate. Break up meat into smaller pieces.

In the same pot, add crushed oregano (the amount that your ancestors tell you), and blended tomato mixture to broth. Bring to boil. Turn off heat and reserve.

Cut tortillas in half- preferably cold leftover tortillas.

In frying pan, place enough oil to cover each tortilla. When hot, fry tortilla until golden brown.

Slice lettuce, tomatoes, and radishes for presentation.

Once tortillas are golden, place hot sauce, crumbled meat, lettuce, tomato, radish, onion, and fresh cheese in the middle of the crispy tortilla. Plate and enjoy!

How to Serve Sopitos
