Tacos al pastor is a beloved Mexican street food that has gained popularity around the world.


It is a type of taco filled with marinated pork cooked on a vertical spit, similar to the shawarma of Middle Eastern cuisine.


The dish originated in the 1930s in central Mexico, specifically in the state of Puebla.


It was inspired by the spit-grilled meats brought to Mexico by Lebanese immigrants who had settled in the country.


The Lebanese immigrants adapted their recipe to use pork instead of lamb or chicken, which was more readily available and cheaper in Mexico.


The name "al pastor" means "shepherd style" in Spanish, which reflects the dish's Middle Eastern influence.


The traditional marinade for the pork includes a mixture of achiote paste, pineapple juice, and various spices, giving the meat its signature sweet and savory flavor.


The pork is then slowly cooked on a vertical spit, rotating in front of a flame until it is crispy and caramelized.


The cooked meat is then shaved off the spit with a long knife, and served on small corn tortillas with chopped onion, cilantro, and a wedge of lime.


Today, tacos al pastor can be found in taquerias and street vendors throughout Mexico, as well as in Mexican restaurants around the world.


It is a cultural icon that reflects the fusion of Mexican and Middle Eastern cuisines, and is loved for its bold flavors and affordable price point.
