Quesadillas have a rich cultural history in Mexico, dating back to pre-Hispanic times. 


The Aztecs used to make a similar dish called "tlaxcalli," which was a flatbread made from corn that was filled with beans, cheese, or meat. 

When the Spanish arrived in Mexico, they introduced wheat flour, which was used to make the tortillas we know today. 


Quesadillas became popular throughout Mexico, and each region has its own unique twist on the recipe.


Today, Mexican Quesadillas are enjoyed around the world and have become a staple of Mexican cuisine. 


They are often served as a snack, appetizer, or meal and can be customized with a wide range of fillings to suit any taste. 


Some popular fillings include Oaxaca or Monterey Jack cheese, chorizo, grilled vegetables, and refried beans.
