Fufu

Directions

1. Peel and cut the cassava into chunks. Make sure to remove any woody parts or fibers from the cassava.
2. Rinse the cassava chunks thoroughly under running water.
3. Place the cassava chunks in a large pot and add enough water to cover the cassava.
4. Bring the water to a boil and cook the cassava until it is tender, which usually takes about 20-30 minutes.
5. Drain the water from the cassava and mash the cassava with a potato masher or a large wooden spoon. Continue mashing until the cassava is smooth and free from lumps.
6. Add a little bit of water to the cassava and mix it well to create a smooth and elastic dough.
7. Put the dough back into the pot and add a small amount of water.
8. Use a wooden spoon to stir the dough vigorously until it becomes stretchy and elastic. Continue stirring until it becomes smooth and free from lumps.
9. Gradually add more water as needed and continue stirring until the fufu has a smooth and consistent texture.
10. Add a pinch of salt to taste.
11. Once the fufu is ready, remove it from the heat and let it cool slightly.
12. Divide the fufu into portions and shape them into small balls or cylindrical shapes.
13. Serve the fufu immediately with soup, stew, or any other African dish of your choice.
